Saturday Eggs (for Sunday Brunch)

Serves: 4 Cooking Time:


  • 1kg of washed potatoes (cut into cubes)
  • 4 x ham steaks (or 500g of bacon)
  • 8 x eggs
  • Cup of grated cheese (whatever kind you fancy)


  • I leave the skin on the potatoes, but feel free to peel before you cube them
  • Parboil the potatoes (either in a pot or in the microwave)
  • Fry the bacon in a hot pan and then add the potatoes
  • Stir the potatoes so they get covered in bacon goodness and if needed turn the heat down and cover to cook
  • Sometimes they require turning, and then covering for more cooking
  • Once potatoes are cooked, crack in the eggs
  • Sprinkle over grated cheese
  • Cover and reduce to low until the eggs are cooked to your liking
  • I serve mine with Pepper & Me Mother Dukkah (because it’s amazing)
